It's a four day weekend (at least for those on the base) which meant heading off base and getting out into nature. The family headed to Mojave National Preserve and enjoy some hiking and exploring.
We had a wonderful time (and I'll blog about it later in the week). However, that also meant when I got home, I soooo did not feel like cooking. Lately, our favorite "Grab and Growl" mean has been the Charcuterie board. Basically, I just spread out aluminum foil, lay out crackers, meats and cheese, some fruit and nuts and the kids are able to grab what they want. Quick, easy and no cooking.
Wednesdays we are bringing the kids into the kitchen. It use to be that Alyssa was required to figure out a meal and cook once a week. Now, I want Ashleigh and Garrett to also be in the kitchen once a week, so they will be helping to both plan and prepare the menu once a week. This week, they have opted for a casserole style dish while Ashleigh will be learning my recipe for making crusty bread.

Sunday - Charcuterie board (AKA Grab and Growl)
Tuesday - Creamy Tuscan Sausage Gnocchi with salad
Wednesday - Fajita Night with rice and beans
Thursday - Cheesy Ham and Noodle Casserole with Crusty Bread and Broccoli
Friday - Chicken and Dumplings
Saturday - Homemade Burger Night with Steamed broccoli and potato wedges
