It's that time again. The time where I sit down to my computer and stress over what to feed the family for the next few weeks. While I really enjoy the process of cooking, I despise the act of meal planning itself. I worry is it too much pasta, too much chicken in a row, ect. While the family never seems to complain about what's on the table, I personally hate repetition. Yet, with that said, we are again doing the Korean chicken wings. These were such a HUGE hit with (almost) the entire family that they have asked for a repeat. The exception being Garrett who would like me to make his just traditional bbq wings.
Also, I'm taking a break this year from my traditional St. Patricks meal. Almost every year, we do corned beef with cabbage. While not an actual Irish meal from Ireland, it does reflect our Irish heritage as that was a common meal with Irish immigrants in the North Eastern United States, where my McGrath family is from. (My grandfather was Irish mixed with Mohegan).. To honor that heritage, I typically make Corned Beef. This year, I want to try something different.
Monday is Ashleigh's birthday (she's turning 10!!!) and since Charles took a week off for vacation that week, we're heading to town to eat for her big day. Each kid gets to pick where they want to go eat for their birthday and Ashleigh has selected Souplantation, a local soup and salad buffet.
Saturday- Dublin Coddle with Soda Bread
Sunday – Honey Butter Fried Chicken Wings with Steamed Broccoli
Monday – Slow Cooker Hoisin Wraps
Tuesday- Firecracker Pork Chops with Brussel Sprouts and Baby Carrots
Wednesday - Cajun Style Steak with brown rice and black beans
Thursday – Italian Beef Sandwiches with Salad and chips
Friday – Baked Tilapia with Green beans and roasted tomatoes
Saturday – Thai Beef Red Curry over rice with salad
Sunday – Baked Lemon and Dill Salmon (Fish Sticks for kids) with steamed broccoli and carrots
Monday – Souplantation for Ashleigh's Birthday!!!!!
Tuesday – Fish Tacos
