Im a few days late on the weekend meal planning. I don't know how it is where you guys are at, but here in California, it has been absolutely nuts.. I did manage to get food to last starting with last Friday til the end of the month and possibly beyond, although I did have to go to multiple stores and make multiple trips to do so. We will be eating much more frozen fish, which I'm not complaining about, because while the meat departments were absolutely decimated, nobody had touched the frozen fish (with exception of stuff like Gordon's fish sticks and panks).. I stocked up on bags of flounder, sea bass and tilapia. Also, the one meat that was in stock at both markets was corned beef briskets.. I bought two - one we ate last night and one for the freezer to have on hand.
Thankfully, my fridge, freezer and food cabinet is stuffed full. I ended up stocking up on flour and yeast - the bread aisle was completely sold out but both of these items were relatively ignored.. Guess who will have bread on their table without having to fight for it.. We had soda bread yesterday and will make hot dog buns for Friday.

Sunday - Tuna melt sandwiches with salad
Monday - Gumbo
Tuesday - Corned Beef, carrots, cabbage and soda bread
Wednesday - Honey Lime Flounder with asparagus, corn and southwest salad
Thursday - Spinach and Artichoke Grilled Cheese and green salad with pears
Friday - Chili dogs, tots and salad
Saturday - Turkey, Chard and Sweet Potato Grain Bowl (frozen pizza for kids)
