Weekend Meal Planning


Payday means one thing - time to do meal planning.  Being that we only get paid on the 1st and the 15th of the month, we always have to plan meals ahead of time - sometimes as far as 2-3 weeks out.  Since our bank pays us one day ahead, that means this month we have to plan meals from now until the 30th  - so 17 days in total.  That's a ton of meals to schedule ahead of time, let me tell ya.  I dread longer pay periods like this, because it means a food bill that is sky high and making lots of room in my fridge, freezer and cabinets - something that isn't in abundance when living in military housing. LOL

Alas, I sat down with my cookbooks, my pinterest pins and MyFreezEasy and pulled together the menu for the next 2.5 weeks.

So, without much ado, here's what's on the menu!!  Well, at least for dinners.. lol

Sunday
Zuppa Toscana Soup

Monday
Buffalo Chicken Nachos with Salad  (recipe from MyFreezEasy)

Tuesday
Taco Spaghetti with salad  (recipe from Diary of a Real Housewife blog) and garlic/rosemary bread

Wednesday
Hot Open Faced Turkey Sandwiches with baby carrots and sliced apples

Thursday
Mississippi Roast with baked potato, salad and roasted carrots (recipe from MyFreezEasy)

Friday
Chicken Tikki Marsala served over whole grain couscous and steamed broccoli

Saturday
Chicken Schnitzel with buttered cabbage and salad  (recipe located in Everyday Cooking Cookbook)

Sunday
Hot Ham and Cheese Campfire Sandwiches with chips and apples

Monday
Chicken A La King over rice

Tuesday
Split Pea and Ham Soup with Rosemary garlic bread

Wednesday
Potato, Broccoli and Sausage skillet with side salad (recipe from BettyCrocker.com)

Thursday
Chicken and Broccoli Alfredo stuffed shells with salad (recipe located in Everyday Cooking Cookbook)



Friday
Andouille Cajun Soup

Saturday
Beef Stroganoff with steamed Brussel Sprouts and salad.

Sunday
Doritos Cheesy Chicken casserole with salad and mixed fruit (Recipe from TheBestBlogRecipes.com)

Monday
Unstuffed Cabbage Rolls with Salad   (recipe located in Everyday Cooking Cookbook)
